Easy Apple Cinnamon and Oat Muffins
This is that time of the year we all look forward to: apple picking! What comes next is absolutely magical - all those apple treats we can make! Scones, pies, cookies, muffins...That said, we decided to share one of our favorite recipes:
Apple Cinnamon and Oat Muffins. Your budding chef will have a blast making these and from our experience they will enjoy eating them for breakfast or a mid afternoon treat. Another piece of good news: you will not have lots of dishes to wash with this recipe!

Easy Apple Cinnamon and Oat Muffins
makes 12
3 cups old-fashioned whole oats
2 large eggs
1/2 cup+ 2 tbs maple or agave syrup
1 and 1/3 cups milk*
1/2 cup unsweetened applesauce
1 teaspoon ground flaxseed
1 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 medium apple (chopped)
2 tbs raisins or chopped walnuts (optional)
Preheat oven to 350°F. Mix all ingredients together in a large bowl. Fill greased muffin cups with the batter, all the way to the top. Bake for 20-25 minutes or until the muffins are set.

* if you are using plant based milk, you can add 1/2 tbs grape seed oil or melted butter
