Mom's Minute: sharing our tips on NEWS12!

I was up all night from excitement! Sharing my family's tips and simple recipes to making breakfast and dinner time a little easier but still keeping it nutritious! I couldn't have been in a better place - Mom's Minute always offers lots of useful information for parents whether it is about cooking or crafts, home remedies, etc. 




Superhero Muffins

Makes 12


1 c quick oats

1 c whole wheat flour

1/2 c chopped dates

1/2 c honey

1 c milk

1/4 c butter

3 tsp baking powder

1 tsp vanilla

1 tsp cinnamon

1 tbs tsp chia seeds

1 tbs hemp seeds


Combine oats, flour, dates, cinnamon, baking powder, half of chia and hemp seeds in a large bowl. Separately whisk eggs, mix with milk, vanilla, melted butter. Bring all ingredients together. Fill up baking cups to the top. Sprinkle with the remaining chia and hemp seeds. Bake 20 minutes at 400F.





Overnight Oats (basic version)


1/2 cup (heaping) rolled oats

2/3 cup unsweetened milk of choice

1/4 c dried cranberries or raisins

1 tablespoon chia seeds

1 tablespoon flaxseed

2 tablespoons honey

Millet, coconut flakes, moringa, apricots, peanut butter - optional, you customize your own jar!


We love using mason jars for our overnight oats. Layer all ingredient of top of each other. Store refrigerator for7-8 hours. Top off with fresh berries in the morning (optional)





Falafel dinner bowl

Serves 4


2-3 c fresh spinach

3 c cooked farro

falafel (8-10)

2 medium cucumber

2 c chopped grape tomatoes

1/3 c greek yoghurt

2 tbs avocado oil

2-3 tbs lemon juice 

1 small red onion

salt and pepper to taste


Dice cucumbers, onions, tomatoes. Add to spinach and farro. Mix well. Separately whisk yoghurt, oil and lemon juice. Pour over the veggies. Bon appettit.



Taco pasta


1 box spaghetti

1 c black beans

1 c chopped tomatoes

1/4 minced cilantro

2 tsp cumin

2 tsp chili powder

2 tsp granulated garlic

2 tbs light oil

1/2 c cheese (cheddar but mozzarella will do to)


Mix the spices with oil. Toss with spaghetti, add tomatoes, cilantro, cheese. Fill the casserole dish with the pasta mix. Bake 10 min at 400F.
