Tis the season of apple picking therefore apple muffins, apple pies, apple cider donuts and everything else with apples in it! I look forward to this time of the year for many reasons: our annual family tradition to take a trip to the farm, hay ride with my kids, warm cider and delicious freshly baked apple cider donuts.
As we collect our apples I have million ideas how to use them and I always think we got just enough only to come home and realize we took more than we should have, a lot more! That's exactly why these muffins made an appearance this week - I am "appled" out! They are soft and delicious, kids got fully involved and we all loved every minute of baking and eating these!
APPLE CINNAMON MUFFINS
1 1/2 c flour
1/2 c honey
1/4 c butter (softened or melted)
2-4 tbs milk
2 tsp baking powder
2 tsp cinnamon
2 grated apples
1 tsp hemp seeds
2 tsp flax seeds
Combine flour, bak powder, cinnamon, flax seeds together. Separately mix honey, whisked egg, grated apples, butter, milk. Continue mixing while adding wet ingredients to the flour mix.
Fill up the baking cups to the top. Sprinkle hemp seeds over the muffins. Bake at 425F 15 min.
