What I love about the weekends? Well, the list is long (and sleeping in is not on it because it is still not an option) but one of the top things is making breakfast together with my children. We cook, we discuss our plans for the day, we laugh and we get to eat something we prepared TOGETHER. If you know me then you guess it right we also experiment in the kitchen a lot!
Long story short, we all were craving waffles so of course we thought making them in a slightly different way. I skipped baking powder and salt, used barley flour. What we came up with: HONEY BARLEY WAFFLES loaded with seeds! Check out the recipe below, there is so much for your in house chef to assist you with while making these. Enjoy!
HONEY BARLEY WAFFLES
1 c. barley flour
3 tbsp. melted butter
1 c. milk
1 tbsp. chia seeds
1 tbsp. ground flaxseed
1 tsp. baobab powder (optional)
3 tbsp. honey
Whisk the eggs and combine with milk, honey and melted butter. Add all remaining ingredients: flour, chia, flaxseed and baobab. Mix the batter ensuring no big lumps are left in the bowl. Follow the directions on your waffle maker (cooking time is usually about 3-5 min). Serve with a little drizzle of honey or maple syrup.
