Happy New Year! As we make our new year resolutions, there is always this one that keeps reoccurring on the list year after year: use all leftovers! After a busy holiday season of cooking, decorating, wrapping gifts and party dinners we all could use an easy brunch idea (that could be fun for your bambino chefs to cook). By that we mean grab your cast iron skillet and mix all you've got in the fridge (well, may be not everything). The best part is that your bambino chefs can fully participate in creating their meal! They help with dicing tomatoes and scallion, brushing oil on the skillet, laying out pasta, whisking eggs, sprinkling cheese...
SCALLION & PASTA PIE
2 C cooked spaghetti (can be replaced with rice, quinoa, etc)
1/2 c chopped scallion
1 diced tomato
1 thinly sliced tomato
1/2 c grated mozzarella
1 tbs avocado oil
And any amount of sausages because everyone loves them for brunch!
Preheat oven to 400F. Grease the skillet with oil. Layout pasta on the skillet. Add tomatoes and sausage. Sprinkle cheese and follow with scallion. Pour whisked eggs over the ingredients.
Bake 20-25 min
