KIDS RECIPE TUESDAYS: Superhero Quinoa Quesadillas

We all love a traditional quesadilla and everything that goes in it. Now let's think outside of the box and revamp the old fashioned way of making this delicious dish. Think QUINOA! We see quinoa in everything lately and quinoa quesadillas are definitely in style right now. Your young chefs will feel adventurous while working with this super grain ingredient and gobbling up their quesadillas once they are done.  We enjoy cooking with quinoa because of its great taste and texture and for super power health benefits: quinoa is rich in protein, fiber, iron and more. Combined with beans and cilantro this quesadilla will become a house staple - we guarantee!


Makes 4

4 Flour tortillas

1 cup cooked quinoa

1 cup shredded sharp cheddar cheese (add a little mozarella)

1 cup cooked black beans

1/2 cup minced cilantro 

2 tbs extra virgin olive oil

1 lemon

1/4 tsp cumin (optional)


Preheat oven to 375F.

Brush each tortilla with olive oil

The following ingredients will go on bottom half of tortillas allowing you to nicely fold your creation at the end. Spread quinoa first followed by black beans and cheese

Sprinkle the fresh cilantro over the cheese

Slice the lemon and squeeze a bit of lemon juice over the ingredient

Fold the tortilla and gently press down.

It is always fun to drizzle some lemon juice over the folded tortillas for a hint of freshness and sprinkle cumin

Place on the baking sheet and leave in the oven for 10-15 minutes
